INGREDIENTS
For the Dough
200 g Wolffia puree
350 g Bread flour
6 g (2 tsp) Instant yeast
1 tsp Salt
35 g Sugar
20 g Olive oil
For Wolffia puree
80 g fresh Wolffia
120g water
Note: Wolffia : water ratio can be adjusted according to your preference.
To garnish
Dried cranberries / Raisins / Dates
Your favorite kinds of nuts - walnuts, almonds, cashews, etc.
Your favorite kinds of grains - whole oats, hemp seeds, flax seeds, sunflower seeds
Butterfly pea flowers

INSTRUCTIONS
Prepare the Wolffia puree
Puree fresh Wolffia with water using hand blender
For the dough
Mix the bread flour, salt and sugar together in a large mixing bowl
Pour Wolffia puree into the mix
Blend using a stand mixer
Knead the dough with your hands until dough no longer breaks apart when pulled
Mix in olive oil and knead the dough further until smooth
Cover the dough and let it rise at room temperature until it doubles in size

Keep refrigerated and continue the next step later
Baking
Shape the dough into loaf
Sprinkle your favorite type of grains and dried fruit
Preheat the oven to 475F
Bake until golden brown, about 20-30min
To serve
Cut into thin or thick slices as per your preference
