Chef Pae's Wolffia multi-grain bread recipe:


INGREDIENTS


For the Dough

  • 200 g Wolffia puree

  • 350 g Bread flour

  • 6 g (2 tsp) Instant yeast

  • 1 tsp Salt

  • 35 g Sugar

  • 20 g Olive oil


For Wolffia puree

  • 80 g fresh Wolffia

  • 120g water

Note: Wolffia : water ratio can be adjusted according to your preference.


To garnish

  • Dried cranberries / Raisins / Dates

  • Your favorite kinds of nuts - walnuts, almonds, cashews, etc.

  • Your favorite kinds of grains - whole oats, hemp seeds, flax seeds, sunflower seeds

  • Butterfly pea flowers




EQUIPMENT YOU WILL NEED

  • Weighing scales

  • Mixing bowls

  • Handheld blender

  • Stand mixer

  • Plastic wrap

INSTRUCTIONS


Prepare the Wolffia puree

  • Puree fresh Wolffia with water using hand blender

For the dough

  • Mix the bread flour, salt and sugar together in a large mixing bowl

  • Pour Wolffia puree into the mix

  • Blend using a stand mixer

  • Knead the dough with your hands until dough no longer breaks apart when pulled

  • Mix in olive oil and knead the dough further until smooth

  • Cover the dough and let it rise at room temperature until it doubles in size

Options for your dough

  • Use right away

  • Keep refrigerated and continue the next step later

Baking

  • Shape the dough into loaf

  • Sprinkle your favorite type of grains and dried fruit

  • Preheat the oven to 475F

  • Bake until golden brown, about 20-30min

To serve

  • Cut into thin or thick slices as per your preference

  • Slather with vegan cheese or mushroom pate OR

  • Serve with your favorite jams and seasonal fruits
